Quick Dark Chocolate Mint Truffles

12 oz. mint chocolate chips 2 tablespoons canola oil cocoa powder confectioners' sugar


1. Add chocolate to microwave safe bowl. Stir in canola oil and microwave for 90 second, stirring every 30 seconds. 2. Refrigerate for 2 hours until firm. 3. Using a metal teaspoon, roll chilled chocolate into balls. Roll quickly between the palms of your hand to achieve perfect circles, if necessary. 4. Roll 1/2 of the truffles in cocoa powder and the other half in confectioners' sugar. 5. Serve immediately or store in airtight container for up to 2 weeks.
