1/2 cup soy flour
1/2 cup flaxseed meal
2 teaspoons basking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup whole wheat flour
1/2 cup soymilk
1/3 cup honey
1 egg, beaten
1 teaspoon vanilla
3 medium bananas, mashed
1/2 cup brown sugar
3 tablespoons butter, softened
1/2 cup walnuts, chopped
Instructions:
Preheat oven to 350 degrees. Grease an 8-inch square baking pan. Combine soy flour and next 5 ingredients (honey through bananas); mix well. Add to dry ingredients; stir gently. Pour into a greased baking pan. Combine brown sugar, butter and walnuts; stir until crumbly. Sprinkle over batter. Bake 30 minutes or until a toothpick inserted in center comes out clean.
