4 cups mixed salad greens
2 small canned beets, drained and diced
2 teaspoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 teaspoon prepared mustard
Salt and freshly ground black pepper to taste
Instructions:
In a bowl, combine salad greens and beets. In a cup, stir together lemon juice, olive oil, mustard, salt and pepper. Pour over salad mixture. Toss gently, but well.
