1?4 cup peanut butter
1 tablespoon soy sauce
2 tablespoons brown sugar
1?4 teaspoon cayenne pepper
3 tablespoons vegetable oil
2 tablespoons vegetable broth
8 ounces thin whole-wheat pasta, (cooked and hot)
1?2 cup cooked peas
2 scallions (finely chopped)
1 medium peeled and diced cucumber
1 to 2 tablespoons chopped cilantro
Instructions:
In a large bowl, stir together peanut butter, soy sauce, brown sugar, cayenne pepper, oil and broth. Add hot pasta and toss until sauce blends into pasta. Fold in peas and scallions.
Arrange cucumber slices around a deep serving plate. Heap the pasta in the center, and garnish with cilantro.
