1 16-ounce can garbanzo beans, drained
1 garlic clove, peeled
1/4 cup tahini (sesame paste)
Juice of 1 large lemon
1/4 tsp salt
1/4 tsp freshly ground white pepper
72 large cherry tomatoes
Minced chives and/or paprika
Instructions:
In a food processor fitted with a steel blade, combine beans, garlic, tahini, lemon juice, salt and pepper. Process until garbanzo beans are ground and mixture is a paste. Add 1 to 2 tbsp cold water, and process again for a creamy consistency. Makes 1 1/2 cups hummus.
To serve, cut top third off tomatoes. Using your finger, scoop out and discard seeds. Fill each cherry tomato with 1 tsp hummus. Top each with a sprinkling of chives or a dash of paprika.
Makes 72 hors d’oeuvres; 24 servings.
Note: Note: For an easier version, do one of the following: Buy an 8-ounce container of prepared hummus, and fill 48 cherry tomatoes, or spoon the hummus into a hollowed-out red or green bell pepper. For a really hot party, fill red and green jalapeño chiles with hummus.
