Cauliflower with Bacon & Scallion Dip

Ingredients:

3 slices bacon, cut into small pieces 2 scallions, minced 3/4 cup sour cream or reduced-fat sour cream 1/4 cup mayonnaise or reduced-fat mayonnaise 1 teaspoon minced fresh dill weed 1 teaspoon lemon juice Salt and pepper to taste 4 cups Cheddar and/or Graffiti cauliflower, heads only in bite-size pieces

Instructions:

Fry bacon in a small skillet until crisp. Drain bacon on paper towel and set aside. Combine scallions, sour cream, mayonnaise, dill weed, lemon juice, salt, pepper and bacon in a bowl. To serve, spoon dip into a bowl and arrange cauliflower on a platter around the bowl. Makes 8 snack servings.
