Personalized Pita Pizzas
“American Medical Association Family Health Cookbook” (Pocket Books, 1997)

Ingredients:

4 whole-wheat pitas 1 cup bottled marinara or pizza sauce 2 cups assorted fresh vegetables, such as thinly sliced bell peppers, carrots, tomatoes, cooked green beans, broccoli florets and onions 1/2 cup thinly sliced turkey salami 1 1/2 cups shredded, reduced-fat mozzarella cheese

Instructions:

Using your fingers or a small knife, split pitas in half. Place the pitas, split-sides up, on a baking sheet. Place under preheated broiler and broil, about 4 inches from heat, until lightly toasted (about one minute). Spread 2 tablespoons (25 mL) marinara sauce on each pita half. Top pita halves with vegetables, then salami, and sprinkle with cheese, dividing evenly among pitas. Return to broiler until cheese is melted and toppings are bubbly (about one minute).

Makes four servings.
