Spicy Barbecue Sauce
The French Culinary Institute’s Salute to Healthy Cooking (Rodale Press, Inc., 1998)

Ingredients:

1 tablespoon butter 1/4 cup minced onions 1 small garlic clove, peeled and minced 1 cup tomato sauce 1 tablespoon brown sugar 1 tablespoon soy sauce 1 teaspoon apple cider vinegar 1 teaspoon Worcestershire sauce 1/2 teaspoon dry mustard Pinch ground black pepper 2 to 3 drops hot pepper sauce Pinch each: ground ginger and cloves

Instructions:

Melt butter in medium, nonstick skillet over medium heat. Add onion and garlic. Sauté 4 minutes. Stir in tomato sauce, brown sugar, soy sauce, vinegar, Worcestershire, mustard, pepper, hot pepper sauce, ginger and cloves. Simmer for 5 minutes or until heated through.

Makes enough sauce for one roast chicken; four boneless, skinless chicken breast halves; or a medium-sized flank steak.
