5 garlic cloves, peeled
1/4 teaspoon salt
2 teaspoons crushed, dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
1/3 cup red wine vinegar
1/3 cup fresh orange juice
1/3 cup fresh lime juice
2 tablespoons vegetable oil
1/4 cup chopped Italian parsley
6 skinless, boneless chicken breasts; boneless pork chops; or fillets of firm fish, such as snapper or grouper
Instructions:
Mash garlic with salt to make a paste. Scrape into a bowl. Stir in oregano, cumin and thyme. Whisk in all ingredients up to parsley.
Place food in shallow glass or ceramic dish. Add marinade, turning to coat. Cover and refrigerate one to two hours for meat or 30 minutes for fish.
