Vegetarian Shepherd's Pie

Ingredients:

4 frozen vegetarian burgers 2 teaspoons olive oil 1 10-ounce package frozen, chopped spinach, thawed and drained 1/4 teaspoon crushed, dried thyme 1/4 teaspoon salt Freshly ground pepper to taste 1 10-ounce package frozen corn kernels 2 cups mashed potatoes (see note) 2 tablespoons bread crumbs, optional

Instructions:

Spray a large, ovenproof skillet with nonstick cooking spray. Arrange vegetarian burgers to fit in single layer on dish. Sauté over medium heat until browned and hot (about 5 minutes each side). Set aside. Heat oil in medium skillet. Add spinach, thyme, salt, pepper and corn, and saute over medium heat 5 minutes. Drain off any liquid. Spread spinach mixture over vegetarian burgers in large skillet. Spread mashed potatoes gently over vegetable mixture. If necessary, reheat over low heat. To give potatoes an attractive golden finish, sprinkle on bread crumbs and heat skillet in an oven preheated to 400 degrees Farhenheit until potatoes are lightly browned.

Serve to 4

Note: Make mashed potatoes with fat-free milk; no butter or margarine.
